Jalapeño Cheddar Biscuits

This recipe pulls off an impressive trick: It calls for a half cup of jalapeños, but the biscuits aren’t spicy at all. Instead, the peppers’ freshness and mild heat come through in the overall flavor. The cheddar cheese adds a little saltiness, and together the peppers and cheese complement the rich butteriness of the biscuit. Dinner Bell Salted Butter is the real star of the show. It adds depth and it gives the biscuits a classic flaky texture. They come out of the oven so perfectly moist and flavorful, you could eat them plain and be super satisfied. How to:

  1. Preheat the oven to 425°F and line a sheet pan with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, black pepper, and salt.
  3. Using a cheese grater, grate the butter into the flour. Using a rubber spatula, mix the butter into the flour until fully combined and the texture looks like sand.
  4. Add the cheddar cheese and jalapeños, and stir until fully combined.
  5. Add the buttermilk and mix until a shaggy dough forms.
  6. Turn the dough out onto a work surface lightly dusted with flour. Using a bench scraper, fold the dough just until it comes together and is fully hydrated.
  7. Using the bench scraper, form the dough into a 6x8-inch rectangle. Fold the dough in thirds like a letter, bringing the top third of the rectangle down and over the center third, then the bottom third up and over the top. Rotate the dough 90º. Lightly flour a rolling pin and roll the dough out to a 6x8-inch rectangle. Repeat this process 3 more times. If the dough starts to get warm or sticky, cover with plastic wrap and place it into the refrigerator for 10 minutes before continuing.
  8. Cut the dough into 8 square biscuits and place them on the parchment paper-lined sheet. Freeze for 10 minutes.
  9. In a small bowl, whisk together the egg and milk until smooth and streak-free. Brush the top of the biscuits with the egg wash.
  10. Bake the biscuits for about 15 minutes, or until they’re golden brown.
  11. Let cool for five minutes before serving. Serve with Dinner Bell Salted Butter and enjoy!
