This recipe pulls off an impressive trick: It calls for a half cup of jalapeños, but the biscuits aren’t spicy at all. Instead, the peppers’ freshness and mild heat come through in the overall flavor. How to:
- Preheat the oven to 425°F and line a sheet pan with parchment paper.
- In a large bowl, whisk together the flour, baking powder, baking soda, black pepper, and salt.
- Using a cheese grater, grate the butter into the flour. Using a rubber spatula, mix the butter into the flour until fully combined and the texture looks like sand.
- Add the cheddar cheese and jalapeños, and stir until fully combined.
- Add the buttermilk and mix until a shaggy dough forms.
- Turn the dough out onto a work surface lightly dusted with flour. Using a bench scraper, fold the dough just until it comes together and is fully hydrated.
- Using the bench scraper, form the dough into a 6x8-inch rectangle. Fold the dough in thirds like a letter, bringing the top third of the rectangle down and over the center third, then the bottom third up and over the top. Rotate the dough 90º. Lightly flour a rolling pin and roll the dough out to a 6x8-inch rectangle. Repeat this process 3 more times. If the dough starts to get warm or sticky, cover with plastic wrap and place it into the refrigerator for 10 minutes before continuing.
- Cut the dough into 8 square biscuits and place them on the parchment paper-lined sheet. Freeze for 10 minutes.
- In a small bowl, whisk together the egg and milk until smooth and streak-free. Brush the top of the biscuits with the egg wash.
- Bake the biscuits for about 15 minutes, or until they’re golden brown.
- Let cool for five minutes before serving. Serve with Dinner Bell Salted Butter and enjoy!
