These cookies are beautifully cracked, with crisp edges and soft chewy centers. Part chocolate cookie, part spiced molasses cookie, these are sure to be a hit with everyone!
How to
- Preheat oven to 350°F. Line sheet pans with parchment paper.
- With an electric mixer, beat butter and sugar until pale and creamy, about 3-4 minutes. Add egg, molasses and vanilla, mixing after each addition.
- In a separate bowl, combine the flour, cocoa powder, baking soda, cinnamon, ginger, cloves and salt.
- Add to the molasses mixture and mix just until combined.
- Portion into rounded tablespoons and roll into a ball. Roll in sanding paper and place on prepared sheet pan.
- Bake until cookies are puffed and set around the edges, 7-8 minutes. Do not overbake.
- Let cool for a few minutes on the sheet pan then transfer to a wire rack to cool completely.
