HOW TO:

  1. In a large slow cooker, combine the chicken, honey, onion powder, garlic powder, cumin, salt, chipotle peppers, and adobo sauce. Stir well. Cook on high for 3 to 4 hours, until the chicken shreds easily with a fork.
  2. Using two forks, coarsely shred the chicken in the sauce. Stir in the lime juice.
  3. Meanwhile, heat a grill pan to high heat. Working in batches, place the corn tortillas on the grill and cook until charred, 1 to 2 minutes per side.
  4. Heat the broiler to high. Place the tortillas in an even layer on a baking sheet and divide the chicken among the tortillas. Top each with an even amount of the cheese. Broil until the cheese is just melted, 2 minutes.
  5. Garnish the tacos with the white onion and cilantro. Serve warm.
