On a list of “most comforting meals,” this Broccoli Shrimp Alfredo would rank near the top. With its creamy, buttery sauce, crunchy broccoli, and hearty shrimp, it hits all the right notes — and with only 5 minutes of prep time and 25 minutes of cook time, it’s a dinner you can have on the table in a snap.
How To:
- Cook the fettuccine according to package directions.
- Meanwhile, fill a saucepan with 1 inch of water and add the broccoli. Bring the water to a boil over medium-high heat. Cover and simmer for 2 to 3 minutes, or until the broccoli is tender. Strain the broccoli and set aside.
- On a large plate or sheet pan, pat the shrimp dry with a paper towel.
- In a large skillet, melt the butter over medium heat. Sauté the shrimp and garlic in the butter until the shrimp turns pink, about 2 minutes. Flip each shrimp and continue cooking for 1 more minute, stirring continuously. Transfer the shrimp to a plate and leave the butter in the pan.
- Reduce the heat to medium-low and stir in the cream cheese, milk, and Parmesan. Cook until the cheeses are melted and smooth, about 4 minutes.
- Add the broccoli, shrimp, cooked pasta, and salt to the skillet. Season with pepper and toss until heated through, about 2 minutes.
- Divide the pasta among 4 plates, and serve immediately.
