Farmhouse Favorite: Best Brownies By Far

Attention, brownie connoisseurs! This recipe has everything you’re looking for — a rich, chocolaty brownie base, mint and cream cheese frosting, and a dreamy ganache topping that’s nothing but creamy butter and semisweet chocolate chips.

How To:

  1. To make the brownies, preheat the oven to 350°F. Line a 9x13-inch pan with foil and spray lightly with cooking spray. Set aside.
  2. In a medium microwave-safe bowl, microwave the butter and unsweetened chocolate for 30 seconds, then stir. Continue microwaving and stirring in 30-second intervals until the mixture is melted and smooth, about 3 minutes total.
  3. Stir in the sugar, vanilla, and salt.
  4. Add the eggs and flour, and mix until just incorporated.
  5. Spread the brownie mix into the bottom of your 9x13-inch prepared pan. Bake for 40 minutes, or until a toothpick inserted into the middle comes out clean. Remove and let cool completely, about 45 minutes.
  6. To make the mint frosting layer, in a large bowl using an electric mixer on medium, whip the butter and cream cheese together until incorporated and fluffy, about 30 seconds. Add the mint extract, food coloring, and powdered sugar. Beat until smooth and creamy, about 30 more seconds.
  7. Spread the mint frosting on top of the cooled brownies, and chill in the refrigerator for 30 minutes.
  8. To make the chocolate ganache layer, in a medium microwave-safe bowl, microwave the butter and the chocolate chips for 30 seconds, then stir. Continue microwaving and stirring in 30-second intervals until the mixture is completely smooth, about 2 minutes total.
  9. Spread the ganache on top of the mint frosting layer. Chill 1 to 2 hours, or until the chocolate has completely set, and the brownies can be cut easily.
  10. The brownies can be stored in an airtight container for up to 5 days in the refrigerator.
