This isn’t just an easy queso recipe. It’s a recipe for the ultimate crowd-pleaser at game days, potlucks, and family gatherings. We make it with award-winning Dinner Bell American Cheese, pepper jack cheese, and green chiles — so it’s got a nice, family-friendly balance of cheesiness and kick. Keep it simple and serve this creamy queso with tortilla chips, or drizzle it on everything from chicken tacos to ground beef nachos.

In a medium-size, heavy-bottomed pot, heat 1 tablespoon Dinner Bell Unsalted Butter over medium heat. Add ½ cup diced yellow onion and sauté until softened, 5 to 7 minutes. Add 2 minced garlic cloves and sauté until fragrant, 1 minute.

Stir in 1 (4 oz) can diced green chilis and 1 (12 oz) can evaporated milk. Cook until steaming, 2 minutes.

Add ¾ lb Dinner Bell American Cheese, 3 slices at a time, stirring and letting the slices melt between each addition. Add 3 cups shredded pepper jack cheese, a small handful at a time, stirring and letting the cheese melt between each addition. This step will take about 10 minutes.

Season with salt. Reduce heat to low and place a small sheet of parchment paper flush against the top of queso, and cover with a lid. Keep warm over low heat until ready to serve, up to 3 hours. Alternatively, transfer the queso to a small slow cooker set to “Warm.”

Garnish with cilantro and serve warm with tortilla chips.
